Traditional Weetbix Slice

This is a slice like nanna used to make.  One of those timeless little beauties that we go back to time and time again.  No matter how trendy food gets, this one has stood the test of time.

This is a sure winner in our family and I always try to make sure I have a batch on hand.  It freezes incredibly well, in fact I keep it in the freezer as it’s quite crumbly at room temperature.

Plus it’s really cheap to make – like under $5 a batch!

You could change the flavour of the icing if you want to – orange, vanilla even chocolate would all work really well.


1 cup Self Raising Flour
3 Weetbix
1 cup Shredded Coconut
3/4 cup Brown Sugar
150 grams Butter
2 tbsp Peanut Butter

Lemon Icing
2 tsp Lemon Juice (you might need a little more)
1/2 cup Icing Sugar sifted


Preheat oven to 180 degrees and line your tray of choice with baking paper.

I generally make this in the Thermomix … and by make I mean I dump all the ingredients in the jug and blitz until it’s the desired consistency.  But the way you are meant to do it is …

In a bowl crush the Weetbix and add the flour, brown sugar and coconut.

Melt the butter and peanut butter together in the microwave and add to the dry ingredients.

Press the mixture into the slice tray and bake for 15 minutes.

Drizzle lemon icing over the top.

Store the Weetbix slice in the fridge or it becomes very crumbly.

Now put your feet up and enjoy with a cup of tea … or just hide in the pantry and scoff.
